Sausage Frittata with Mushrooms

1 T olive oil
1 red onion, thinly sliced
1 sausage link, diced
8 oz mushrooms, remove stems
salt and pepper to taste
8 eggs
1/4 cup goat cheese or cheese of your choice
3 scallions chopped (optional)*
You can also add spinach if you like.

Preheat oven to 375°

Place a large oven-safe skillet over medium heat. Once the pan is hot, add the olive oil and onion; cook until translucent, about 3 minutes. Add the sausage and mushrooms and continue sauteing, about 5 minutes. Season with salt and pepper.

Beat the eggs with a fork or whisk; add to skillet, along with the cheese and scallions.

Place in the oven and bake until the eggs have fully set (a toothpick inserted into the middle should come out clean) about 20 minutes. Let cool and slice into portions, topping with scallions.

*Note: Chives can be used in place of scallions.
